0 Easy Recipes for Using Up Thanksgiving Leftovers (That Don’t Feel Like Leftovers)

November 5, 2025

holiday slow cooker turkey

Thanksgiving dinner is one of the most delicious and meaningful meals of the year — a time to gather, give thanks, and enjoy all the comfort food we love. But if your family is anything like mine, there’s always plenty left over (and honestly, that might be the best part).

After a long day of cooking and celebrating, the last thing you want is another complicated meal. So when Black Friday rolls around, I love turning those Thanksgiving leftovers into quick, cozy dishes that make life a little easier — no stress, no waste.

Here are some of my favorite simple and creative recipes for using up Thanksgiving leftovers — perfect for busy women who want delicious food without the fuss.

10 Quick & Easy Recipes for Thanksgiving Leftovers

This sandwich is the perfect way to use up all your leftover roasted turkey. It's so tasty no one will believe how easy it is. Simply, substitute leftover roasted turkey in lieu of the turkey lunch meat listed in the recipe. It would pair great with this apple feta salad for a quick lunch for your Thanksgiving guests. 1. Turkey Pesto Baked Sandwich

Turn your leftover roasted turkey into something fresh and crave-worthy. This warm, melty sandwich comes together in minutes — no one will believe it started with leftovers. It’s a family-favorite any time of the year.

Just swap in your Thanksgiving turkey for the deli meat in the original recipe, and you’ve got an easy lunch that feels special without extra effort. Pair it with a crisp Apple Feta Salad (it’s another fave of mine) for a simple, satisfying meal your guests (or you!) will love.

2. Savory Egg & Stuffing Breakfast Bake

This cozy egg bake is one of my go-to recipes for when we have overnight guests — and a favorite from our very first cookbook (you can grab it here!). It’s the perfect way to turn leftover Thanksgiving stuffing into something comforting and new.

Swap 4 cups of your leftover stuffing for the instant mix in the original recipe. The combination of fluffy eggs, sharp cheddar, and savory stuffing bakes into a golden, hearty breakfast that feels indulgent but effortless.

Serve it with a fresh fruit salad and a few sweet baked goods — like these easy 3-Ingredient Pumpkin Muffins — for a simple, crowd-pleasing post-Thanksgiving brunch.

3. BBQ Turkey (or Chicken) Sliders

This simple recipe turns your Thanksgiving leftovers into something you’ll want to make all year long. Use your leftover turkey — or swap in shredded chicken — and toss it with your favorite BBQ sauce for a quick, crowd-pleasing meal

You can warm it up in a skillet or the slow cooker, or serve it cold for easy lunch sliders. My family loves piling the saucy meat onto sweet Hawaiian rolls for the perfect mini sandwiches — simple, satisfying, and ready in minutes.

4. Shredded Turkey Burrito Bowls

When you’re ready for something that tastes nothing like Thanksgiving dinner, these burrito bowls are a fun, fresh way to reinvent your leftovers. Just substitute your leftover shredded turkey for the chicken in the original recipe — it works beautifully.

Set up a simple burrito bowl bar (or nacho bar) with rice, beans, salsa, and toppings, and let everyone build their own. It’s a colorful, no-stress meal that feels new and flavorful after a few days of holiday food.

5. KFC-Inspired Mashed Potato Bowls

This might be the best way to use up Thanksgiving leftovers (in my opinion). These cozy mashed potato bowls were inspired by a trip to the Iowa State Fair — where comfort food gets piled high and eaten with a spoon.

Start with a base of leftover mashed potatoes, then add turkey, corn, gravy, and a sprinkle of cheese. It’s everything you love about a holiday dinner, layered in one bowl. Around here, we jokingly call it a Thanksgiving Sundae — and honestly, it’s just as fun to make as it sounds!

Set out the toppings and let everyone build their own bowl — it’s simple, hearty, and a total crowd-pleaser.

6. Apple Feta Salad with Leftover Turkey

After a big Thanksgiving feast, I always start craving something fresh and light — and this salad is exactly that. It’s crisp, flavorful, and comes together in minutes, which makes it one of my favorite easy lunches all fall long.

For a heartier version, just toss in some shredded leftover turkey. The mix of sweet apples, tangy feta, and savory turkey is so good — fresh, simple, and satisfying.

7. Slow Cooker Turkey Tortilla Soup

This simple, flavorful soup is one of my favorite “dump and go” recipes — perfect for those busy post-holiday days when you just want something warm and easy.

Just swap the chicken for 2 cups of shredded leftover turkey, toss everything into the slow cooker, and let it simmer until dinner. It makes a big batch, so you can freeze some for later or portion it out for easy lunches all week.

Cozy, hearty, and stress-free — exactly what we all need after Thanksgiving.
