Meal #1 – Apple Walnut Salad

  • Spinach $1.19
  • Feta $2.19
  • Apple $0.50
  • Dressing $3.49
  • Walnuts $4.99

I served this salad along with my apple chicken salad sandwiches.

Meal #2 – Slow Cooker Carnita Tacos

This is a fan favorite and would be perfect for entertaining guests too! I place the thawed carnitas roast in the slow cooker for 8 hours on low and shred with a fork at the end.

We told the carnitas with some queso fresco cheese, southwest salad kit mix, and salsa! You could also add sour cream and guacamole too! Serve with tortilla chips, salsa and refried beans for a filling and tasty meal!

  • Carnitas roast $5.16
  • Southwest salad kit $2.89
  • Refried beans $0.79
  • Queso fresco cheese $1.49

Meal #3 – Cheeseburgers & Sweet Potato Puffs

Cheeseburgers are always a good idea year-round. We just throw these frozen hamburger patties on the grill and we have a yummy flame-broiled hamburger at home in under $15 for a fraction of the cost of fast-food! We will often pair it with French fries but this time I got these sweet potato puffs because I knew the kids would love them!

  • Artisan buns $1.99
  • Angus burger patties (6) $7.59
  • Cheese $1.79
  • Sweet potato puffs $3.49

Total Cost – $14.86

Meal #4 – Chicken Cordon Bleu Casserole with Green Beans

We love chicken cordon bleu and this recipe is so simple. You just layer cream of chicken soup, ham slice and Swiss cheese on top of tenderized chicken breasts and cook through in the oven. Pair it with some frozen sautéed vegetables and you have yourself a hearty meal.

Why do you only plan 5 meals per week?

Great question! I have planned up to 7 meals but it seems we tend to eat leftovers one of the other nights, eat out occasionally and we usually do a simple snack tray supper on Sunday. Check out more about snack tray suppers here. So, 5 meals works great for our family.
