Simple Apple Feta Spinach Salad Recipe

We just went to the orchard the other day and came home with dozens of apples so we have been making all the apple recipes (including our faves – apple nachos and apple chicken salad). During my weekly Aldi shopping trip, I found this delicious apple thyme vinegarette dressing and voila, this simple apple feta spinach salad was born and it’s been on repeat ever since.

So, let’s get cooking, shall we?

Apple Feta Spinach Salad Ingredients

  • 4 cups loosely packed spinach leaves (approx. 1/2 bag)
  • 1 cup chopped apples
  • 1/2 cup feta cheese
  • 1/4 cup coarsely chopped walnuts
  • 1/4 cup apple thyme vinegarette dressing

Apple Feta Spinach Salad Recipe Directions

Gather all your ingredients and then rinse your spinach and spin dry or lay on paper towels to dry. While, the spinach is drying you can chop 1/4 cup walnuts as well as an apple of your choice.

We picked Jona Gold apples at the orchard but my favorites for a salad like this would be honey crisp or Granny Smith or a variety that has a touch of tartness.

Once the spinach is dried, you can mix all the ingredients together. We used 1/4 cup dressing but you can certainly add more or less based on how much dressing you like on your salads.

If you can’t find the apple thyme dressing at your Aldi store. It was located in the produce refrigerated section, you can swap it out with another balsamic vinegarette of your choice.

Ingredients

  • 4 cups loosely packed spinach leaves (approx. 1/2 bag)
  • 1 cup chopped apples (1-2 apples)
  • 1/2 cup feta cheese
  • 1/4 cup coarsely chopped walnuts
  • 1/4 cup apple thyme vinegarette dressing

Instructions

  1. Rinse and dry 4 cups spinach leaves
  2. Coarsly chop 1/4 cup walnuts
  3. Chop 1 cup apples (approx. 1-2 apples)
  4. Combine feta, apples, walnuts, spinach and 1/4 cup vinaigrette dressing and toss salad.
  5. Enjoy!

Notes

If you can't find the apple thyme dressing, swap it out another vinaigrette based salad dressing. Tart apples work best for this recipe.
