Easy 4 Ingredient Chicken Pot Pie

Sometimes you just need some comfort food but don’t have much time.  This easy and simple chicken pot pie recipe is perfect for a busy weeknight.  It’s so easy your kids can help you make it.

We used canned chicken but you can substitute leftover turkey as well.  It’s so good no one will believe it’s only 4 ingredients!  This meal is perfect to take to another family and can be frozen and cooked later.

I don’t know about you but I always have help in the kitchen.  My little sous chefs love to help me in the kitchen.  They help me gather the necessary supplies including a shallow baking dish (you can use a pie plate), a spatula for mixing, a can opener and a bowl to mix up the ingredients.

Ingredients

1.  Refrigerated pie crust
2.  Cream of Chicken Soup
3.  1 bag of mixed vegetables
4.  I can of all-white meat chicken in water
**Alternately you can use 1 1/2 cups shredded leftover turkey

 

 

Preparation Instructions

Preheat your oven to 350 degrees.  Then, drain the chicken and place in the mixing bowl along with the mixed vegetables and can of chicken soup.  Place the first, of the 2, refrigerated pie crusts in the greased, shallow baking dish.

Make sure to go around the edge, pinching the sides closed.  Then, make a few slices on top to vent while baking.

 

How to Cook the Pot Pie

Once you have filled your pie crust and pinched the edges shut, you can place your pot pie in a pre-heated oven (350 degrees) for 45-50 minutes.  The crust should come out golden brown. You may choose to allow it to rest for a few minutes to set-up before serving.

We like to serve our pot pies with a side salad, fruit and if I am feeling generous, bread & butter.  It makes a delicious meal to use up leftover turkey or a great meal to take to a friend.  It’s great for a busy night because it takes no time to prep or you can prep ahead and freeze.

  1. We loved this! made it New Years day ,2020, I will be making it again, thank you for this recipe. And Happy New Year! it took me longer to bake, but i think my oven is not up to exact temp. i am probably wrong, and we ended up bumping temp upto 400 degrees
