Praise be, it’s grilling season. Nothing better than the smell of grills firing up around the neighborhood. We love grilling, there’s less kitchen mess and lots of simple meals. We, especially love grilled chicken breast but sometimes you need to spice it up but I don’t have a lot of time so I want some easy grilled chicken breast ideas! I bet you do too, that’s why you are here.

Grilled Greek Chicken & Greek Salad

Let’s start with one of our family’s new favorites. We love Greek food and I wanted to try my hand at a simple take at home. We started by marinating boneless skinless chicken breasts in 1/2 a bottle of Greek vinaigrette dressing. We just placed the trimmed chicken breast in a zippered plastic bag along with the dressing. We allow it to marinade for at least 30 minutes (the longer the better). Then’ its time to grill!

We top the Greek chicken with a Greek salad. I wasn’t sure if my kids would like it but I was dead wrong. It’s so simple and loaded with lots of yummy veggies! Top with a sprinkle of feta cheese and you have a delicious, easy and fresh meal perfect for warm summer nights on the back porch.

Delicious and easy marinated Greek grilled chicken breast and Greek salad with tomatoes, cucumbers, red onion and feta

Ingredients

  • 6 boneless, skinless chicken breast
  • 1/2 Bottle Greek vinaigrette dressing
  • 1 cucumber, skinned and cubed
  • 1 dry pint grape tomatoes, halved
  • 1/4 red inion, diced
  • 1 6 oz container crumbled feta cheese
  • 1/4
  • 2 Tablespoons olive oil
  • Salt & pepper

Instructions

  1. Trim chicken breast and place in a zippered plastic bag with 1/2 bottle Greek vinaigrette and allow to marinade for at least 30 minutes before grilling.
  2. Cube 1 whole cucumber. Cut in 1/2 one dry pint of grape tomatoes, dice 1/4 red onion. Place in a bowl with 2 tablespoons olive oil and combine. Add salt & pepper to taste.
  3. Grill chicken until cooked through.
  4. Scoop the greek salad over the grilled Greek marinated chicken and sprinkle with feta cheese.

Marinated Grilled Chicken Breasts

If you loved the Greek chicken recipe, try marinating your chicken breast in other dressings. We love using lots of different vinaigrette dressings.

You can even use a dried salad dressing mix. We love to add dry Italian or ranch dressing mix to a zippered plastic bag along with 1 tablespoon of olive oil to coat. Allow the chicken breast to marinade for at least 30 minutes before grilling.

Grilled Chicken Vegetable Kabobs

Why is it that when you put anything on a stick kids are instantly more interested? This is true for these delicious grilled chicken vegetable kabobs. Sometimes, I will cube the chicken breast and marinate them in a vinaigrette dressing in a zippered plastic bag like I do with the Greek chicken, sometimes I don’t.

Sometimes, if we have time I will even serve it up buffet style and let everyone help make their own. Of course, being sure to wash your hands before and after since you are dealing with raw chicken. You can add any vegetables you like to your kabob. We like to add mushrooms, green peppers, onions, and tomatoes. If you don’t marinade your kabobs, just make sure to add a little salt and pepper. Then, grill them up being sure to turn them so they don’t burn.

Stuffed Grilled Chicken Breasts

This is the epitome of what I call halfway homemade. I love to get a yummy dip and spread it on the inside of a tenderized and thinned chicken breast. Our favorite dip to use is a spinach artichoke dip.

Thinning out the chicken with a meat tenderizer will help you fold the chicken and it will help it cook more thoroughly and easily.

Once, you have smeared some of that delicious dip on the chicken breast and folded it, I just use a toothpick to hold the chicken breast together while you grill it.

Grab a piece of tin foil and grease it with some cooking spray (prior to putting it on the grill, aerosol cans & open flames don’t mix). Then, place the stuffed chicken on the tin foil and grill on both sides.

Quick Tip – We like to serve some additional dip with tortilla chips as an aside and if you prefer not to stuff your chicken, you can just top it with spinach artichoke dip instead. You could even serve it as a spinach artichoke chicken sandwich!

Grilled Chicken Breast Wraps

This is one of my favorite ways to use up or reimagine grilled chicken breast. Then, grab your favorite bagged salad kit in any flavor you like. Slice the chicken breast and toss the salad. Then, layer the grilled chicken breast slices on a large (burrito size) tortilla with the tossed salad and wrap.

Since, you combine so many different bagged salad kits, the flavor options are endless. Some of our favorites include Caesar salad chicken breast wraps, avocado ranch chicken breast wraps, and Thai salad chicken breast wraps. This makes a great quick lunch or dinner!

Grilled Chicken Breast Sandwiches

Sometimes, a simple tweak is all that’s needed to switch up a classic favorite. Grill up some of your favorite chicken breast, top it with your favorite sauce and put it on a bun. You could make a buffalo chicken sandwich by adding Frank’s red hot, a bbq chicken sandwich by adding your favorite bbq sauce or top it with your favorite dip to make a sandwich like a spinach artichoke chicken sandwich.

When it comes to grilled chicken, it’s easy to get stuck in a rut but with a simple tweak or placing it in a wrap, topping it with a fun salad or making it into kabobs it’s completely reimagined.
