Easy Mini Strawberry Pies

When I was a little girl my grandmother would make these cute little pies. Sometimes, she would even leave the assembling to us. How fun to make your own mini pies? I now know why my Grandma made them. Not only are they easy to make, they are relatively healthy as far as pies & dessert go to!

They are so cute and quick to make so they’d be perfect your next BBQ, potluck or afternoon snack. You can even line up all the ingredients and let the kids assemble them themselves just like my grandma let me!

Easy Mini Strawberry Pies Ingredients

  • Keebler Mini Ready Graham Pie Crusts
  • 1 Lb. Strawberries
  • 1/4 Cup Blueberries
  • Whipped Topping

It’s Time To Assemble the Mini Strawberry Pies

Start by rinsing your strawberries and blueberries. Then, chop the strawberries into small bit size pieces so they fit nicely into the pie crust.

Pile the strawberries into the pie crust and place a dollop of your favorite whipped cream on top. We used fresh whipped cream (see the recipe here) or we also use frozen whipped topping too for an even more simple recipe.

Then, garnish the mini pies with a few blueberries and a strawberry slice. You can cover them in the refrigerator a few hours or over night but they do taste best eaten fresh.

QUICK TIP: the more ripe the strawberries the better because the juices of the strawberries will make the strawberry filling nice and sweet. If your strawberries aren’t as ripe, you can add 1 T. of sugar to the chopped strawberries. Mix and let sit for 15 minutes before scooping into the pie crust.

Easy mini strawberry pies make a perfect quick dessert or snack.

Ingredients

  • Keebler Mini Ready Graham Pie Crusts
  • 1 Lb. Strawberries
  • 1/4 Cup Blueberries
  • Whipped Topping

Instructions

  1. Rinse the strawberries and blueberries.
  2. Thaw the frozen whipped topping according to package specifications.
  3. Chop the strawberries into small bite sized pieces.
  4. Evenly distribute strawberries into 6 mini graham cracker pie crusts.
  5. Place a dollop of whipped cream on top.
  6. Garnish with blueberries and a strawberry slice.

Notes

You can mix in 1 T. sugar to the strawberries and allow to sit for 15 minutes before scooping into the mini pie crusts.
