Egg Salad BLT Sandwiches

This was a random concoction we discovered by accident but now it’s one of my son’s favorites. Add egg salad to your BLT in lieu of the mayo and elevate your BLT to a whole new level. Bonus, it’s a great way to use up those leftover hard boiled eggs.

Deviled Eggs

My youngest son calls these “doubled” eggs! So, that’s what we call them too. My favorite tip to make deviled eggs is to place all the ingredients in a plastic zippered bag.

Then, zip close and mix the ingredients together until they are well combined. Then, snip one corner of the bag off and pipe the filling into the eggs. Of course, garnishing it with a little paprika for pizzazz.

Deviled Egg Pasta Salad

I had never thought to pair leftover hard boiled eggs with pasta salad, until my friend Ally (Sweet Savory Eats) mentioned this deviled egg past salad recipe of hers. It’s a delicious side that can be paired with some hamburgers for a quick weeknight meal or another holiday gathering. Get the full recipe here.

Hard Boiled Eggs for Breakfast

one of our favorite simple breakfasts is to eat a couple of peeled hard boiled eggs with some fruit and sweet bread.

Potato Salad

One of my favorite parts of potato salad is the egg. Sometimes, I will buy pre-packaged potato salad and add in cubed hard boiled eggs for a halfway homemade potato salad! I also like this potato salad recipe from fellow Iowan, Iowa Girl Eats. We aren’t huge fans of relish in our pasta salad, what about you?

Egg Avocado Toast

This has become a big trend lately. Toast up some artisan bread, smash up an avocado and top with a sliced hard boiled egg for a protein-packed, flavorful breakfast that’s delicious at home or on the go.

Add Eggs to Any Salad

We love to buy bagged salad kits and a sliced hard boiled egg is an easy addition to any salad. Make up a salad bar with lots of chopped vegetables, shredded cheese, croutons, lettuce and sliced hard boiled eggs. It’s a delicious and simple healthy dish after a holiday weekend.
