Simple Pepperoni Pizza Quesadillas Recipe

Right before we moved, I was on a mission to clean out the fridge.  I was rummaging around and found I had some pizza ingredients but no pizza crust.  Darn!  Luckily, I did find some tortillas and not only do my kids love pizza they also love quesadillas so we whipped up some simple pepperoni pizza quesadillas, or pizzadillas, and a new favorite meal was born.

They are so simple so they are perfect for a busy weeknight, a quick lunch and you can even make these ahead and pop them into your kids lunchbox for school lunch.

What Do You Put in Your Pizza Quesadillas?

That’s the beauty of quesadillas you can tailor them to your very own taste buds. We call these types of meals “choose your own adventure” because everyone in the family can make it just how they like it which for my kids makes them 10x more likely to eat it! Just us?

Pepperoni Pizza Quesadillas Ingredients

  • 1 16oz bag of shredded mozzarella or pizza blend cheese
  • 1 bag of pepperoni (for this recipe I used 7 pepperoni slices per quesadilla)
  • 8 soft-shell flour tortillas (I used taco size but you can use burrito as well)
  • Jar of pizza or marinara sauce for dipping
  • 1-2 Tablespoons Butter for sautéing
  • Additional Optional Ingredients – chopped & sautéed vegetables, Italian sausage, chopped basil

How Do You Make a Pepperoni Pizza Quesadillas?

Start out by sautéing 1 T. of butter on medium heat in a fry pan. When the butter is melted, place one tortilla in the pan and top with 1/3-1/2 cup cheese and pepperoni plus any other toppings you would like.

Pro Mom Tip – Place the ingredients on the counter and have your kids grab a plate and make their own quesadilla. Then, you can cook them.

Top with another tortilla and allow to sauté. Remember, the name of the game is don’t let the pan get too hot and burn your quesadilla. Keep it on medium to medium-low heat to get a nice crispy light brown crust. Keep an eye on it, it doesn’t take long.

When one side is cooked, carefully use a spatula to flip it over. If the cheese isn’t melting, you can add a lid for a minute or two but otherwise cook uncovered.

When the quesadilla is cooked, I use a pizza cutter to slice up the quesadilla in pizza slices and serve with a sides of marinara sauce for dipping.

What Do You Serve With Your Pepperoni Pizza Quesadillas?

Pizza quesadillas pair great with a side salad. My kid’s love a Caesar salad and you can buy a pre-made kit if you are in a hurry or want to keep things extra simple. Add some fruit and you have yourself a delicious quick and easy meal. ENJOY!

What’s The Best Way to Make a Quesadilla?

That’s a great question. I like to cook mine with a little bit of butter in a fry pan like I did for this recipe but occasionally I will put it in the microwave for 15-30 seconds if I am in a hurry. Check out this article with more details about how you can cook the perfect quesadilla.

Pepperoni Pizza Quesadillas

Easy pepperoni and cheese pizza quesadilla recipe perfect for a quick, kid-friendly lunch or dinner.

Prep Time 5 minutes
Cook Time 5 minutes
Total Time 10 minutes

Ingredients

  • 16 oz shredded mozzarella cheese
  • 1/2 cup pepperoni (approx. 24 slices)
  • 8 soft-shell flour taco tortillas
  • Marinara sauce for dipping
  • **Additional optional ingredients include Italian sausage and chopped vegetables like onion, green pepper, mushrooms & olives.

Instructions

  1. Saute 1 T. butter in a fry pan on medium heat until melted.
  2. Place 1 tortilla in the pan and top with 4 oz (1/2 cup) shredded cheese and 6 pepperoni.
  3. Place another tortilla on top and allow to cook on medium heat uncovered until the bottom tortilla is a nice crispy, golden brown. Aproximately 2-3 minutes.
  4. Flip the quesadilla over with a flat spatula carefully so contents don't fall out and allow to cook for an additional 2-3 minutes until that side is golden brown and cheese is melted.
  5. Cut with a pizza cutter and serve with a side of marinara sauce for dipping and a side salad.

Notes

If the cheese isn't melting, you can place a lid on the fry pan for a few minutes to help melt the cheese.
