Insanely Simple Slow Cooker Chicken Stuffing Bake

If you are looking for a simple recipe, you have come to the right place because today I am dishing up my insanely simple 3-ingredient slow cooker chicken stuffing bake.  Say that 10 times fast.  I pair it with some steamed veggies and some fresh fruit and we have ourselves a simple, yummy dinner for a busy night!

One of the comments I get all the time is that meal planning is so tedious and making meals for your family can feel so cumbersome.  Somehow we got fed the lie that in order to feed your family it must be complicated.  I am here to tell you I serve up SIMPLE dishes every night of the week and if it isn’t simple, I save it for a special occasion because simple floats our boat.

Let’s get cooking, shall we?

What You Will Need for the Chicken Stuffing Bake –

1 Can of Cream of Chicken Soup

1 Box of Stuffing Mix (cook to box specifications – 1/4 cup butter & 1 1/2 cup water)

2 chicken breasts

Now, I double this recipe as I am cooking for a family of 6 and this recipe rewarms beautiful for leftovers.  You know I love me some planned-overs!  You know those meals you plan for leftovers, yep we call them planned-overs.

Preparation & Directions for the Chicken Stuffing Bake –

First, prep the chicken breast.  I am weird and cut off every last suspicious part, just me?  Since prepping chicken is one of my least favorte things to do.  I buy fresh chicken breast in bulk and prep a large amout at once.  Then, I use what I need for the recipe and divide the rest into baggies and freeze it for future recipes.  My future self thanks me.

After the chicken breast is trimmed, I lay it in the bottom of my slow cooker. I, then, layer on the can of cream of chicken soup and spread it around to evenly cover the chicken breast.

Go ahead and cook the stuffing mix based on the box’s directions.  I add 1/4 cup of butter per box and 1 1/2 cup water per box.  I place the mix, water, and butter into a microwave-safe bowl and cook it on high for 5 minutes.  When it is cooked,  I fluff it with a fork.  Then, I dump the stuffing over the soup and chicken.   Spread it around for an even layer.

Set the crockpot on high for 4-6 hours.  Voila, you are done!  I told you so easy, right?

You will know it’s done when the chicken is cooked through.  No prep work is needed before you serve it up.  I literally just scoop it right out of the slowcooker like a casserole on to a plate.   Serve with steamed veggies and fresh fruit.  One dish and fix it and forget it.  How about that for an easy weeknight meal?

If You Like Your Stuffing Less Moist –

Try baking this dish in a 9 x 13 inch pan.  Layer the chicken, then the soup with stuffing on top and bake uncovered for  hour at 350 degrees or until chicken is cooked through.

You can also wait to put the stuffing on top until the last 20 minutes.
