Simple Slow Cooker Chicken Tortilla Soup Recipe

It’s fall Y’all (how many times can I get away with saying that living in Iowa?) and you know what that means, it’s crockpots and soups season.  Today, I am sharing one of our family’s favorite soups, a simple slow cooker chicken tortilla soup recipe.  It’s so easy, like dump and forget it easy!  It takes about 5 minutes to prepare and has only 6 ingredients, it’s so SIMPLE!

Starting in the fall and all winter, this easy soup recipe is constantly on my meal plan.  I love to make it early on in the week because it makes enough for leftovers so we can enjoy soup all week. Did I mention it’s healthy too?  Let me share the recipe with you!

Slow Cooker Chicken Tortilla Soup Ingredients –

4 raw chicken breasts (you can also use pre-shredded chicken)

2 (15 oz) cans black beans (do not drain)

2 (15 oz) cans stewed diced tomatoes

1 cup salsa (choose the heat you desire)

1 (4 oz) can chopped green chiles

1 (15 oz) can tomato sauce


Slow Cooker Chicken Tortilla Soup Directions –

Combine all ingredients into slow cooker (this slow cooker is similiar to mine).  Stir and cook on low for 8 hours.  Just before serving, take out cooked chicken and shred with a fork.  Replace in to slow cooker and stir.  If the soup is too thick, you can add some hot water to thin the soup out to the consistency you desire.

Serve & Enjoy

Once cooked, serve the soup with shredded cheese, tortilla chips, sour cream, and guacamole.  Store leftovers in individual servings in glass containers (I love these) for leftovers.  This meal makes enough for two families so it’s the perfect meal to share with someone in need too!

I love cooking with a slow cooker because I can prep my meal in the morning really quick.  Then I can prep dinner quickly and we can still sit down as a family at the table in the evening even when life is full of carpooling and activities!  Do you have any favorite slow cooker meals?
