Simple 4-Ingredient Slow-Cooker Pot Roast Recipe

The other night when I was adding meal ideas to next week’s meal plan (get your meal planner here), my daughter asked for the yummy beef you put on potatoes or a bun. ‘You know the one you put int he crock pot and shred.” Ah! Yes, the easy and simple 4-ingredient slow-cooker pot roast recipe.

I don’t know how she couldn’t remember that complete name but it’s a fan favorite around here and don’t tell the kids but it’s so easy to make, I would make it for them any time!

Based on the flavors and the way the meat melts in your mouth, you would totally guess it takes way more work and way more than 4 ingredients but it doesn’t so add this to your meal plan for next week stat.

Simple 4-Ingredient Slow-Cooker Pot Roast Recipe

Slow-Cooker Pot Roast Ingredients

3-4 lb. Chuck Roast

1 Lipton Onion Soup Packet

1 Dry Ranch Dressing Packet

4-6 Pepperoncinis

1 Cup Water

Slow-Cooker Pot Roast Instructions

If you aren’t in a hurry, the experts recommend browning both sides of your chuck roast in 1-2 T. butter. I often skip this step but it does help seal in the moisture.

Often, I just rinse the roast and then place it in the slow cooker. Then, I combine the dry onion soup packet with the dry ranch packet and 1 cup of water. Mix with a whisk until it’s fully incorporated. Pour over the roast. Toss in 4-6 pepperoncinis as well.

Cook the roast in the slow cooker for 9-10 hours on low or 4-5 hours on high. I test the roast by seeing if I can easily pull the meat apart with a fork. The easier it is to pull apart with a fork the better in my opinion.

Once, the roast is done pull it out and remove excess fat and shred.

Use a mesh strainer over a measuring cup and strain out the fat and pepperoncinis. Return the juices to the slow cooker and combine with the shredded chuck roast. Keep the slow cooker on the “keep warm” setting until you are ready to serve dinner.

How Do You Serve Your Slow Cooker Pot Roast?

Shredded Beef Sandwiches

We serve it one of two ways. The first is on some buns as a shredded beef sandwich. Our kids love to use slider buns or dinner rolls to make their sandwiches a little smaller. What is it about tiny food that makes it so appealing to kids?

Serve up your sandwiches with this yummy hash brown casserole, raw veggies and fruit for a quick supper.

Shredded Beef Sundaes

Another less obvious way is to serve the shredded beef over mashed potatoes and sprinkle with shredded cheese, corn and a tomato as the cherry! In Iowa, we call this a “beef sundae”.

You can make homemade mashed potatoes or in a pinch on a busy week night, we use instant potatoes. I know I just lost credibility with some of you but I have 4 kids and life often calls.

It takes 4-5 hours on high or 9-10 hours on low for a 3-4 lb. chuck roast to cook thoroughly to at least 145 degrees internal temperature.

Ingredients

  • 3-4 lb. Chuck Roast
  • 1 Onion Soup Packet
  • 1 Dry Ranch Dressing Packet
  • 4-6 Pepperoncinis
  • 1 Cup Water

Instructions

  1. Rinse roast and place in the slow cooker
  2. Mix together the dry onion soup and ranch dressing packets with 1 cup of water. Pour over the roast.
  3. Place 4-6 pepperoncinis on either side of the roast.
  4. Cook on low for 9-10 hours or on high for 4-5 hours.
  5. Shred with a fork.
  6. Strain the juices and remove fat. Pour juices and meat back in the slow cooker and combine.
  7. Serve on a bun as a sandwich or over mashed potatoes.
