Super Simple Classic Chili

It’s that time of year – it’s soup time.  It snowed the other night so the kids are basically ready to put up the Christmas tree.  I am just ready to indulge in some warm and cozy food.  The only problem is our schedule doesn’t slow down this time of year, it only speeds up!  Anyone else?  Enter this delicious and super simple chili recipe.  It’s perfect for a chilly weeknight and it makes enough for leftovers!

Let’s cook the Simple Classic Chili, shall we?

Ingredients-

I 28 oz Can Diced Tomatoes. **Do not drain**

1 15 oz Can Tomato Sauce

1 15.5 oz Can Light Red Kidney Beans. **Drain & Rinse**

1 15.5 oz Can Dark Red Kidney Beans. **Drain & Rinse**

1 White Onion

1 Green Pepper **optional**

1 lb 90% Thawed Lean Ground Beef

3 Tablespoons Chili Powder

1 tsp Salt

1/2 tsp Pepper

2 Cups Water

Preparation & Directions for this Simple Classic Chili Recipe-

Place 1 TBSP of butter in a large stockpot and let melt.  Then, add in the chopped green pepper and let cook for 2-3 minutes.  Add in the chopped white onion until soft and translucent, on average another 3-5 minutes.

Add in the lean ground beef and break apart.  My favorite way to break apart ground beef is with this tool.  Get one for yourself here, you’ll never go back to a fork again.  Stir often until meat is fully cooked through, about 6-7 minutes.

While the meat is cooking, drain the 2 cans of beans and rinse.  When the meat is cooked through, dump in the drained and rinsed beans, tomato sauce, diced tomatoes (do not drain), 3 T. chili powder, 1 t. salt, 1/2 t. pepper and 2 cups of water.  Stir together and bring the chili to a boil.  Stirring occasionally.

Once the chili starts to boil, turn down the heat and let it simmer uncovered on the stovetop for 20-25 minutes.

It’s Time to Accessorize the Simple Classic Chili Recipe –

This is my kids favorite part.  They can choose their own adventure and add the toppings they like to the top.  We like to top it with shredded cheese, sour cream, tortilla chips or crackers.  You could also add hot sauce or garnish with jalapenos too!

We love to serve our chili with cornbread.  My favorite simple cornbread is the Jiffy brand.  My kids love to mix it up themselves.

Sometimes, if I am feeling extra generous I’ll serve this simple classic chili with cinnamon rolls.  I know cinnamon rolls seem odd but growing up whenever they served chili at school, it was always served with a cinnamon roll so its nostalgic for me.  Did you grow up eating cinnamon rolls with chili?

Simple Slow Cooker Chicken Tortilla Soup Recipe

It’s fall Y’all (how many times can I get away with saying that living in Iowa?) and you know what that means, it’s crockpots and soups season.  Today, I am sharing one of our family’s favorite soups, a simple slow cooker chicken tortilla soup recipe.  It’s so easy, like dump and forget it easy!  It takes about 5 minutes to prepare and has only 6 ingredients, it’s so SIMPLE!

Starting in the fall and all winter, this easy soup recipe is constantly on my meal plan.  I love to make it early on in the week because it makes enough for leftovers so we can enjoy soup all week. Did I mention it’s healthy too?  Let me share the recipe with you!

Slow Cooker Chicken Tortilla Soup Ingredients –

4 raw chicken breasts (you can also use pre-shredded chicken)

2 (15 oz) cans black beans (do not drain)

2 (15 oz) cans stewed diced tomatoes

1 cup salsa (choose the heat you desire)

1 (4 oz) can chopped green chiles

1 (15 oz) can tomato sauce

 

Slow Cooker Chicken Tortilla Soup Directions –

Combine all ingredients into slow cooker (this slow cooker is similiar to mine).  Stir and cook on low for 8 hours.  Just before serving, take out cooked chicken and shred with a fork.  Replace in to slow cooker and stir.  If the soup is too thick, you can add some hot water to thin the soup out to the consistency you desire.

Serve & Enjoy

Once cooked, serve the soup with shredded cheese, tortilla chips, sour cream, and guacamole.  Store leftovers in individual servings in glass containers (I love these) for leftovers.  This meal makes enough for two families so it’s the perfect meal to share with someone in need too!

I love cooking with a slow cooker because I can prep my meal in the morning really quick.  Then I can prep dinner quickly and we can still sit down as a family at the table in the evening even when life is full of carpooling and activities!  Do you have any favorite slow cooker meals?
