What’s Up April 2018

Hey Hey! It’s the end of April (say what? It felt like January most of the month so it IS hard to believe).  I feel like it was both a slow and fast month.  It never fails to amaze me what we can pack into just 30 short days!  We have been busy this month getting our adoption paperwork together, spring cleaning and decluttering as well as spending time with family and friends.  It’s time to recap everything we have been eating, doing, watching, reading, wearing and looking forward to!  Let’s get to it!  What have we been up to in April 2018?

What We Ate This Month –


Philly cheesesteaks & waffle fries

Jalepeno cheese chicken with rice

Super Nacho Casserole

Chicken Tortilla Soup

Chicken Saland Sandwiches

Roast, Rice & Gravy

Cheeseburgers & Fries

Homemade Pizzas

Chicken Tender Salads

Fajitas, Refried Beans, and fixins


Gyros with pita chips & hummus

Leftovers (we have leftovers at least every Thursday night & on the weekends)


What I’m Reminiscing About –

Easter – We had a great weekend with our cousins, eating out, shopping, sharing my testimony and leading worship at church!  We had the best Easter despite the frigid temperatures!


What I’m Loving –

The weather and the forecast.  There were weeks here recently that I dreaded looking at the forecast but things are looking up!  Sunday afternoon, we sat out on the back deck while the kids played.  It was a perfect way to spend the day!

What We’ve Been up to in April –

We celebrated Easter with Scott’s sister’s family and my cousin Madelynne!  The weather was quite chilly but we enjoyed lunch at Bubba in Des Moines, colored eggs, played, shopped and had a lot of fun!

We spent time at Target finding lots of cute things we didn’t know we needed!

We hosted some friends for play dates and let Panera do the cooking!

Scott’s (and mine) dear friend from college stopped by with his family for dinner!

We went to MN to see our niece play the wicked step-mother in Cinderella!

On the way home, we stopped by Ikea to get Solon a new dresser!


We stopped by the federal building and the local police station to get our fingerprints and background checks completed for our dossier!

On a particularly chilly evening, we decided to go get ice cream!

We did a few house projects including the girls closet (read more here).

We played outside and finally enjoyed some spring-like weather!

The kids requested a boys and girls slumber party!  The boys borrowed Vera’s bed and the girls all slept in our bed.  Lucy missed her bed fairly quickly so Vera and I got the king to ourselves ;)!

We won tickets from the Des Moines Moms Blog and enjoyed some Professional Bull Riding!

The kids cultivated the garden dirt and we planted some lettuce seeds.

We watched Solon play his first two games of little league!  He got to pitch, catch and play first base so far! He stole a few bases, caught a ball to make an out and pitched 2 strike outs!

My mom drove thru on her way home from AZ so we celebrated my cousin Madelynne’s birthday and did some shopping!


What I’m Dreading –

Nothing at the moment 🙂


What I’m Working on –

I am working on teacher appreciation week for our elementary school.  This is my last year leading the charge and we have lots of fun things planned.  Thankful for all the donations of time and resources so we can bless our teachers.  We are inviting families to participate by doing the following 3 activities any time through out the week. Then, the PTO Teacher Appreciation Committee will provide fun goodies and themed snacks for every day of the week.  This year our theme is “Thanks for Helping Us Grow”!



I am also working really hard on the May 12 Live Event.  I can’t wait, I am so excited  If you haven’t registered and you are within driving distance, you should come.  You can find out more here and register!  You will be encouraged to live a simple and purposeful life as well as learn about purposeful nutrition and fashion, meet other KOKO’s and have the chance to win several awesome giveaways!


What I’m Excited About –

My sister is having a BABY!!!!!  We are in the final countdown and we don’t know if baby is a boy or a girl!  Her official due date is May 5!  May is also the last month of school and ushers in summer fun!  It’s a busy month including the live event, teacher appreciation week, Mother’s Day, Nana’s Birthday, Memorial Day Weekend at the lake and the last day of school!
