Aldi Recipe: Easy Grilled Pork & Pineapple Kabobs

Are you looking for a simple but delicious summer meal? These easy grilled pork and pineapple Kabobs were an instant dinner winner in our house, even with my pickiest eaters. I picked up all the ingredients for this quick and delicious meal at Aldi. So, it’s the perfect budget-friendly meal for your next Aldi meal plan.

Aldi Recipe: Easy Grilled Pork & Pineapple Kabobs

Ingredients

**All ingredients can be found at Aldi as well as other grocery stores.

  • 1 pre-marinated pork loin (BBQ or teriyaki flavored), cut into 
  • 1-inch cubes1 fresh pineapple, cut into chunks
  • Optional: 1 red bell pepper, cut into 1-inch pieces
  • Optional: 1 red onion, cut into 1-inch pieces
  • 2 tablespoons olive oil
  • Wooden or metal skewers

Optional Homemade Marinade (if not using pre-marinated pork)

  • 1/4 cup soy sauce
  • 2 tablespoons brown sugar
  • 2 tablespoons pineapple juice
  • 1 tablespoon lime juice
  • 1 teaspoon sesame oil
  • 2 cloves garlic, minced

Preparation

I use metal skewers and a pre-marinated pork loin available at your Aldi grocery store for an even simpler Aldi meal. If you prefer, start by marinating your pork. I usually choose between BBQ or teriyaki flavors, but both work for this recipe, depending on what you prefer. This time-saving option allows you to skip the marinating step and assemble your kabobs, saving you even more time. 

Pro-Tip: If using wooden skewers, soak them in water for about 30 minutes before assembling the kabobs to prevent burning on the grill. 

To make your marinade, whisk together the soy sauce, brown sugar, pineapple juice, lime juice, sesame oil, and minced garlic in a bowl. Place the cubed pork in an airtight container and pour the marinade over it, ensuring all pieces are well-coated. Let it marinate in the refrigerator for at least 2 hours or overnight for extra flavor.

Variations and Tips

  • Experiment with different pre-marinated pork flavors available at Aldi for variety.
  • Try using different colored bell peppers for more visual appeal.
  • Add cherry tomatoes or sweet peppers for extra vegetables.
  • If you don’t have a grill, cook these kabobs under the broiler or on a grill pan on the stovetop.
  • For a spicier version, sprinkle red pepper flakes on the kabobs before grilling.
  • Substitute chicken breast or even tofu for vegetarian options.

Assembling the Kabobs

Whether using pre-marinated pork or your own marinade, it’s time to assemble your kabobs. Alternately, thread the pork cubes and pineapple chunks. You can also add chunks of red bell pepper and red onion onto the skewers. This colorful combination not only looks appealing but also provides a variety of textures and flavors. You can also skewer anything else you like onto these kabobs. Got extra zucchini? Kabob it!

Grilling Instructions

Preheat your grill to medium-high heat. Brush the assembled kabobs lightly with olive oil to prevent sticking. Place the kabobs on the grill and cook for about 4-5 minutes per side or until the pork reaches an internal temperature of 145°F (63°C). The meat will unstick as it cooks, so avoid pulling it before it’s ready to turn, and be patient. It’s hard for me too! Use a meat thermometer to ensure the pork is cooked to the proper temperature.

Quick Cilantro Lime Rice Side

​You can whip this rice up while someone else is manning the grill or cover it with a lid to keep it warm.

Ingredients:

  • 2 cups fast-cooking white rice (prepared according to package instructions)
  • Juice of 1 lime
  • 1/4 cup fresh cilantro, chopped
  • 1 tablespoon olive oil
  • Salt to taste

Instructions:

  1. Cook the rice according to the package instructions. For an affordable option, you can use Aldi’s long-grain fast-cooking white rice.
  2. Add 1 lime juice to the water.  
  3. Once the lime juice and water boil, add the rice, chopped cilantro, and cover until cooked.
  4. Serve alongside your Pineapple and Pork Tenderloin Kabobs.

This quick cilantro lime rice is the perfect dish for your Aldi meal. It’s light, refreshing, and pairs beautifully with the sweet and savory pork and pineapple kabobs flavors. Plus, it’s an excellent way to use fresh cilantro, often available at a good deal in Aldi’s produce section. I love cilantro. This rice also is perfect for my favorite burrito bowls. Not a fan of cilantro lime rice?

These pineapple pork kabobs pair well with all sorts of side dishes. Serve them over a bed of brown rice or with a baked sweet potato. We usually serve ours with raw vegetables and fruit for a quick summertime meal.

This Aldi Meal is a Winner

Not only was it an instant favorite with my kids. This pork skewers recipe is delicious and budget-friendly. Plus, pork loin is a good source of lean protein, essential for muscle health and satiety. Fresh pineapple provides vitamin C and enzymes that aid digestion. Bell peppers add more vitamin C and antioxidants, while red onions offer flavor and additional health benefits.

You can make these kabobs ahead. Just chop the vegetables in advance, storing them in airtight containers. When you’re ready to cook, assemble the skewers and grill. Leftover cooked kabobs can be stored in an airtight container in the refrigerator for up to 3 days, perfect for quick weeknight dinners or lunches to go.
