True Confession: I’m a Cook, Not a Baker. I’ve heard it said that you’re either a baker or a cook, and friends, I am firmly a cook. Baking has always felt more like a science experiment than a creative outlet for me. Let’s say I’ve had my fair share of baking disasters—flat cookies, burnt edges, frosting fails…you name it.

That’s why I’m all about finding ways to simplify the process so my cookies look like an adult made them, taste delicious, and—most importantly—don’t leave me feeling stressed out. If you can relate, you’re in the right place. Let’s dive into some stupid-easy baking and decorating hacks to make cookie-making fun, festive, and stress-free. Amen? 

Cookie Baking Hacks That Simplify the Process

1. Double the Dough, Double the Fun
If you’re going through the effort of making cookie dough, why not double it? Wrap the extra batch tightly in plastic wrap and store it in the fridge for up to three days or in the freezer for up to three months. This way, you’re always ready for impromptu baking—whether it’s for a school party, a neighborly treat, or just a cozy night in with your family. Future-you will thank you!

2. Store-Bought Dough Is Your Best Friend
Sometimes, simplicity is key. Don’t be afraid to grab store-bought dough. Many brands even have directions for tweaking the dough for different purposes. For example, adding some flour can turn standard sugar cookie dough into cut-out cookies. Easy peasy! I made Scott a batch of chocolate chip cookies for his birthday and froze the dough balls in the freezer to have hot chocolate chip cookies whenever he wanted!

3. Keep Your Dough Cool
Sticky dough driving you crazy? Cold dough is much easier to work with. Pop it in the fridge for 30 minutes before rolling and cutting. And here’s a little trick: After cutting out your cookie cutter shapes, place them in the freezer for 15 minutes before baking. This helps prevent cookies from spreading in the oven, ensuring they keep their object-shaped cookies intact.

4. Parchment Paper = Easy Cleanup
Line your cookie sheets with parchment paper for effortless cleanup. No scrubbing, no mess—toss the paper when you’re done. Parchment paper also helps achieve the best results by evenly baking cookies and preventing sticking.

5. Let Them Set
When your cookies come out of the oven, let them sit on the cookie sheet for 2-3 minutes before transferring them to a cooling rack. This gives them enough time to finish baking and firm up so they don’t lose shape or crumble.

6. For Chewy Cookies, Timing Is Everything
Want soft cookies every time? Pull them out of the oven when the edges are set and lightly golden, but the centers still look slightly underbaked. They’ll continue to cook as they cool, giving you that perfect texture without becoming rock-hard.

7. Use Basic Ingredients for Big Flavor
Stick with simple sugar cookie recipes using white sugar, a pinch of salt, melted butter, and a little flour for the easiest way to bake cookies with great flavor. Adding a touch of brown sugar can also make a huge difference in the texture and taste of your cookies.

Cookie Decorating Hacks for a Stress-Free Experience

Decorating cookies can be the most fun or stressful part, depending on your setup. Here are my go-to hacks to keep the process enjoyable and manageable:

1. Protect Your Surfaces
Before you even start decorating, lay down a plastic tablecloth. It’ll catch all the frosting drips, stray sprinkles, and sugar dust. When you’re done, roll it up and toss it. Cleanup = done!

2. Use a Muffin Tin for Supplies
A muffin tin is perfect for organizing sprinkles, candies, and other decorating supplies. It keeps everything contained and makes it easy for little hands to grab and share.

3. DIY Pastry Bags
Don’t have fancy pastry bags? No problem! Use a Ziploc bag instead. Fill it with frosting, squeeze the air out, and snip a small hole in one corner. It’s the easiest method for decorating cookies without extra hassle.

4. Store-Bought Frosting Saves the Day
If making frosting from scratch feels overwhelming, don’t sweat it. Store-bought frosting works just fine. You can even jazz it up with food coloring or a splash of vanilla extract to make it your own.

5. Contain the Sprinkles
Decorating with sprinkles is fun until they’re everywhere. Use a rimmed paper plate to catch the mess. It’ll save you extra time cleaning up.

Bonus Tips for Stress-Free Holiday Baking

Here are a few more awesome hacks that have saved me time and sanity over the years:

  • Enlist Help: Baking can be a family affair. Assign tasks to your kids, like stirring the dough in the mixing bowl, cutting out shapes, or sprinkling decorations. They’ll love being part of the process.
  • Batch Baking: If you’re making multiple types of cookies, bake similar ones together to streamline oven time and temperature settings.
  • Freeze Frosted Cookies: Once decorated, freeze cookies in a single layer on a metal pan, then transfer them to an airtight container. This keeps them fresh and ready to go for holiday parties or gifting.
  • Use Royal Icing Transfers: These are the best way to add intricate designs without the stress of freehand decorating. Make them ahead of time and add them to your cookies later.
